The oldest presentation of olive oil there is, and still the most direct demonstration of quality. Nothing to cook.
Serves 4 to 6. 5 minutes.
Ingredients
- 1/2 cup MOC Garlic Oil
- 2 tbsp finely grated parmesan
- 1 tbsp chopped basil, oregano or parsley
- 1 tsp crushed red pepper flakes
- 1/2 tsp cracked black pepper
- 1/2 tsp flaky sea salt
- 1 tbsp aged balsamic
- Assorted warm crusty bread, focaccia and bread sticks
Method
- Pour the MOC Garlic Oil into a wide, shallow dish. Surface area determines how much of the solid seasoning the bread collects.
- Sprinkle the parmesan, herbs, chili flakes, pepper and salt across the surface.
- Add the balsamic immediately before serving so it marbles rather than emulsifies.
- Tear the bread rather than slicing it. Torn crumb holds more.
